A young beef is typically 15-22 months. It is smaller, more tender, with less marbling in the steaks and roasts and less fat in the ground beef.
This is for a reservation on a quarter. Final price with cut and wrap will be $4.60 per pound hanging weight, due before pickup at butcher.
This is a good choice if you want any of the following:
– lean and tender grassfed beef
– smaller portion (about 70# packaged meat)
– A fully custom cut half beef with smaller portion (about 140# packaged meat, or less if you specify mostly boneless cuts)
