These pork halves are from 18 month old pigs, but the size is still much smaller than factory pigs, with the hanging weight of about 55#
Our pigs are raised on a large pasture with their main diet being clover-heavy pasture, fruit in season, and pumpkins and squash through early winter. They get just a snack of bread or grain in the evening – about ½ lb per day. This produces a very lean pork with a very high proportion of Omega-3 fats. The meat is dark red and very flavorful with a bit of “tuna” taste from the high Omega-3 fat content. It seems like a different animal than grocery store pork! And since they are so different, I’m happy to buy back any unused portion if it’s really no something you like (but don’t worry too much, that hasn’t happened yet!)
Because they are small and very lean, they don’t produce a traditional bacon, but they have some amazing lean hams. We process them all with a standard cut:
Petite pork chops 1” thick 4 Per pack
Smoked whole hams (small)
Ribs with side pork attached
Whole shoulder roast
Ground pork with all fat (1# packs) (no seasoning)
Hocks (fresh)
Soup bones
Heart and liver (not charged in the hanging weight)
They are priced at $7/lb which includes everything – even the smoking costs for the hams. Average hanging weight is 55# each. But if you really want some and that is too much I can deliver just a half 😊
